What Is a Grease Trap?

A grease trap, also known as a grease interceptor, is a plumbing device designed to collect and separate grease, oils, fats, food particles, and other solids from wastewater before it enters the municipal sewer system.

All kitchen wastewater lines—including sinks, floor drains, and mop sinks—typically flow into the grease trap. Anything washed down these drains ends up in the interceptor. As wastewater enters the trap, heavier solids settle to the bottom, while lighter materials such as grease and oil float to the top. The wastewater remains in the middle layer.

A specially designed outlet pipe allows only the wastewater from the middle layer to exit the trap and flow into the city sewer system, while the grease and solids remain contained inside.
